Creamy Mushroom & Kale Pasta



Hey Friends Hey! *inserts me singing* So, finally after months of being home because of this pandemic, I'm finally starting to get a routine together. Yes, it took about 5 months. Also, I don't care! This time has just been so weird. I'm remembering to provide myself some grace and actually sleep in some mornings- ON A WEEKDAY! Won't he do it! Yes!


Anywho, I'm back to meal prepping for the week. It went from me planing out a monthly menu, to doing just a weekly menu, and now doing the weekly menu but taking a few hours and prepping all food on Sunday. I have never been a "freezer meal" person because I like eating fresh cooked meals, but, honestly it hasn't been too bad having "fridge meals".


One of our meal prepped dinners this week was this pasta. We had it on Monday. I don't want to deem Monday as "Meatless Mondays" (because I love a good themed night dinner" but that's what it was this week. A super quick and easy dish that heated up very well the next day in the oven! Try it out!





What You'll Need:


1/2-1 c mushrooms, cleaned and sliced

1 bunch of kale, cleaned, stemmed and chopped ( I like to use dino kale)

2 Tbps olive oil, divided

4 oz cream cheese

1- 1.5 c heavy cream

1 c fresh grated parmesan cheese

8 oz of pasta ( I used penne)

salt

pepper

garlic salt


Directions:


  1. Cook pasta according to packaging. Drain, reserving 1/4 cup pasta water.

  2. Heat pan over medium high heat. Add mushrooms and cook for 2-3 minutes before adding 1 tbsp oil, salt and pepper. Cook an addition 2- 3 minutes. Remove from pan and set aside.

  3. To the same pan, add olive oil, kale, garlic, salt and pepper. Cook just until kale is wilted about 3 minutes or until desired tenderness. Remove from pan and set aside.

  4. Lower heat to medium low. add in cream cheese and whisk in cream slowly until well incorporated and no lumps. This could take 5-7 minutes. Once creamy and no lumps, add in cheese and whisk until incorporated. Salt and Pepper to taste.

  5. Add cooked pasta, pasta water, mushrooms and kale to cream sauce. Mix until well combined.

  6. Enjoy with fresh cracked pepper on top.


To enjoy next day, put pasta in a casserole dish and cover with foil. When ready to reheat, place in a 350 degree oven for 30 minutes or until hot and bubbly!
