Roasted Strawberry Glaze

Hey Friends Hey!

So... you remember that strawberry glaze that they have in the produce section of the grocery store? You know... it's right next to the strawberries! Yeah, that stuff! Can I be honest with you? Of course, I know! I kinda love it! Hahaha, we are no judgement over here, so please stop giving me the side eye! I'm sure you love it too on your strawberry shortcake!

Well, I decided to show you how easy and simple it can be to make it yourself. We are talking less than 5 ingredients here! And once you are done, you would are going to put it on everything or eat it right out of the pot! Ok...I went too far? But, really! It is super delicious and you made it yourself! It goes really well with ice cream, cheesecake, or Strawberry Shortcake! *wink, wink*

What you'll need:

1 lb fresh strawberries ( cleaned, hulled, and halved )

1 c sugar

1 c water ( a little more for blending strawberries)

3 Tbsp corn starch

1/2 a lime/lemon (juiced)

Note- You will need a blender or masher for this recipe.

Directions:

1. Pre-heat oven to 400 degrees.

2. Place strawberries on baking sheet lined with parchment paper or aluminum foil and roast in preheated oven for 20 minutes. When done, remove from oven and allow to cool off for 10 minutes.

3. Place roasted strawberries in the blender and blend for 15-30 seconds! (That's it! add a tablespoon of water if needed)

4. Add sugar and corn starch to a pot and mix very well to get out any lumps. Add in the blended strawberries, citrus juice, and water. Bring to a boil, stirring occasionally. The mixture will begin to thicken. Once boiling, stir constantly for 2-4 minutes. *Be careful, this mixture will be very hot*

5. Allow mixture to cool about 20 minutes before placing in an air tight container. Refrigerate up to 2 weeks!
