1, 2, 3 | One Pot Pasta

I'm back with another recipe! Of course it's super simple, super easy, and super quick! Remember the 30 minute meal? Yeah, Well I call this the 20 minute meal! I'll take it!

This recipe came about after going to a food event. I tried the most delicious pasta. So I asked the guy hosting the booth, " what sauce is on the pasta?". He looked at me awkwardly and said, "It's just ricotta!". Well after that, I headed right for the grocery store to pick up ricotta to make this dish!

This dish is more of a cheat meal for me. It is really creamy and cheesy and doesn't take much effort at all. We have a grand total of THREE, yes THREE ingredients! Pasta, Ricotta, and Fresh Cracked Black Pepper! Yup, that's it!

I like to use linguine or fettuccine, however any pasta will do. Using a pasta like rigatoni would probably be best because it holds all off the delicious sauce really well. Don't be alarmed, the dish will immediately become a little stiff once you are done cooking. It does not change the texture or flavor of the dish. After all, ricotta is a pretty firm cheese. So if you need to reheat it, just add a little water.

The great thing about this dish is that you can serve it straight up by itself, with a protein, or as a side dish. I made this as a dinner for two, but just double or triple the recipe as needed.

What you'll need: ( for 2 people)

Dried Pasta ( any style)

2 cups waters

5 oz ricotta

grated parmesan cheese (optional)

black pepper

salt

chopped parsley (garnish)

Directions

1. To a pot over medium high heat add water, bring to a boil. Salt the water and add in the pasta. Occasionally stir the pasta to avoid sticking. Allow pasta to cook as directed or about 8-10 minutes. (If you think your pasta needs more water, add it in. We want to boil the water almost completely out).

2. After 8-10 minutes, check pasta for doneness. To the pasta, stir in the ricotta, black pepper, and cheese (optional). Mix until well incorporated.

3. Once the pasta and cheese is mixed, sprinkle with parsley and serve!
