Do Not Ruin the BBQ | Strawberry Pineapple Cake

So I really don't have a name for this cake, but we'll just call it the Strawberry Pineapple Cake. What I do know is that you will not disappoint the masses when you bring this cake to the BBQ!

I made this cake for a Ladies Appreciation Lunch. I'll pat myself on the back because it was the star of the luncheon. To be fair, I hosted the luncheon and made all of the food so I can do some critiquing. Lol. I knew it was a hit when my Auntie, who doesn't eat boxed cake, went for a second serving. Say what now? That's right!

This is a full proof recipe that will have all of your family members wanting more. The addition of fresh strawberries really makes this cake mouthwatering. What I love about this cake is that it isn't too sweet. We all know how that can be. It is the perfect balance of what a dessert should be.

Give it a try! I make it as a double layer cake, however making it as a sheet cake would probably be better for a bbq!

You will need:

1 box Strawberry cake mix

3 eggs (room temperature)

1 cup of pineapple juice

1/2 cup oil

1 3.4oz french vanilla pudding mix

1.5 cups cold milk

1 8oz tub of whipped topping, thawed

1 can crushed pineapples, no sugar added, drained (reserve juice for cake)

1 cup strawberries, diced

Directions:

1. Prepare cake as directed on box. Substitute pineapple juice for water. I used two round pans that I spray with a baking spray for easy release when done.

2. Once the cakes are done, remove from oven and let cool completely on a cooling rack.

3. While the cakes are cooling, prepare the "icing". In a large bowl whisk the pudding mix and milk. Whisk for two-three minutes. The pudding will start to thicken. To the pudding mix in the whipped topping. Mix until well combined.

4. To assemble cake, place the first cake round on a cake stand or plate. Take half of the pudding mixture and top the cake. Spread the mixture evenly. Top with 1/2 of the pineapples and half of the strawberries. Place the 2nd cake round on top and repeat with the remaining ingredients.

5. Chill until ready to serve. Refrigerate leftovers, but you won't have any!
