Taco Tuesday | The Fish Edition

Hey Friends Hey! Happy Taco Tuesday!

Who doesn't love a good taco? And a fish taco at that! Uh, yeah! I'll take it. A few Taco Tuesday's ago, my friend Kelly and I made happy hour plans. We ended up at the M&S Grill Baltimore and guess what? That's right, they had tacos, crispy fish tacos. Now, I'm not sure if I had 1 too many sangrias or I just really enjoyed them, but the tacos were AH-MAZING! So much so that I came home and tried to recreate them a few days later. I can't seem to stop making them at this point. Now that I think of it, my friend, Kelly, recreated them too. So I guess we can say they were really tasty.

These tacos are super quick ,weekday friendly, and doesn't take much effort at all. We can call it a 30 minute meal if you like. I picked up the "Beer Battered Cod" from my local Aldi ($4.49). I like this particular brand because it's inexpensive and wild caught. The frugal frannie in me really loves a good deal! I also use a slaw mix for a bit of crunch! Topping the tacos off with a squeeze of lime and cilantro just brightens the whole meal up. Ok, enough of me talking. Lets get to cooking!

You will need:

Frozen Cod Fillets ( The brand I use come with 5 fillets)

Corn or Flour Tortillas

1 1/2 cup Coleslaw mix

1/4 cup Ranch dressing

2 tbsp Sriracha

cilantro, chopped

1 stalk green onion, chopped

Juice of 1 lime

Fresh ground pepper

Directions:

1. Prepare fish as directed on the package.

2. While the fish is cooking, make the slaw mixture. Place the coleslaw in a bowl. To that add the ranch dressing, sriracha, 1/2 of the lime juice, about a table spoon of cilantro, green onion, and black pepper. Mix until well incorporated. (I adjust the dressing and sriracha as needed. The more sriracha, the more spicy it shall be). Set aside.

3. When the fish is done, remove from the oven and set aside.

4.Place the tortillas in the oven for 1-2 minutes to get warm and a bit crispy.

5. Now it's time to assemble. Place one fish fillet in a tortilla. Top with the slaw mixture, extra cilantro and lime juice. Repeat until you are complete.
