Sometimes I struggle with coming up with dinner options for my family. I just don't want to eat the same meals week after week. Oh, and on top of it all, I have my own personal restrictions with not eating red meat or pork.
To help myself, I started doing themed dinner nights. Ya know, like "Taco Tuesday", that kind of thing. It helped me out a lot because I knew exactly what we were eating for that night but I also liked to get creative!
Anywho, my boys give me free range to recipe test and have them be my taste testers. They also graciously give me their 'UNBIASED" honest opinion! This week, I actually had my parents over and they gave me the approval to post this recipe! I mean if your mom says it is good, you should probably trust them.
Let me know what you think. This recipe of course is super easy. You pretty much chop some stuff, open some stuff and throw it in a pan! lol

What You'll Need:
1 tbsp olive oil
1/2 white onion, chopped
1 can black beans, rinsed and drained
4-5 roma tomatoes, diced
1 cup chicken stock
1/3 cup roasted/smoky salsa ( I use a mix of both Frontera roasted tomato salsa & double roasted salsa)
1 lb shrimp, cleaned and deveined
cumin, salt, 7& pepper to taste
Directions:
1. In a large sauce pan over medium heat, add oil and saute' onions about 5 minutes.
2. Stir in beans, tomatoes, stock, salsa, cumin, salt&pepper. Reduce heat to medium low and simmer uncovered 15-20 minutes.
3. Add shrimp, simmer an additional 5-8 minutes or until cook through.
4. Serve over rice! Enjoy!
